Hydroxyl-radicals, which can be produced both naturally and under controlled conditions, have applications in food and surface disinfection. This PHO Rounds will provide an overview on the origins of the hydroxyl-radical process and relevant practical examples.

The presenter will also discuss supporting evidence of applications of the hydroxyl-radical technology for inactivating dry biofilms and whole rooms in clinical settings, in addition to portable devices to be used in food service, domestic settings and in the field for biocontainment.

Intended audience: Public health professionals with interest in environmental health, public health inspectors, public health managers.

By the end of this session, participants will be able to:

• Describe the science behind the hydroxyl-radical process.
• Recognize the activity of hydroxyl-radicals to inactivate viruses, bacteria, yeast, moulds and endospores.
• Describe different applications of the hydroxyl-radical process for food and health care sectors.

Dr. Keith Warriner obtained his BSc in Food Science from the University of Nottingham and PhD in Microbial Physiology from the University of Aberystwyth. He joined the faculty of the Department of Food Science within the University of Guelph in 2002 and established a food microbiology research group. His research has focused on risk assessment of emerging pathogens, diagnostics, and intervention technologies, notably hydroxyl-radical disinfection process. Dr Warriner teaches at the undergraduate and graduate level along with performing outreach to industry. He is Editor in Chief of Food Microbiology and Associate Editor for the Canadian Journal of Microbiology.
